Cold days are more and more frequent and nothing about us it doesn’t heat up as quickly as a plate of hot soup.
That’s why today I’m sharing with you my favorite recipe for a quick mushroom and leek soup. It will be on your table in no time and you only need a few ingredients.

Groceries:
– 2 tablespoons of oil
– 200g of leeks
– 300g of brown mushrooms
– 1 large carrot (150g)
– 1 potato (200g)
– 1 liter of water
– 1 teaspoon of salt
– 1/2 teaspoon of garlic powder
– 1/2 teaspoon of dried basil
– 1/2 teaspoon of dry parsley
– 2 spoons of sour cream
– some parmesan cheese

Procedure:
Cut the leek into small cubes and fry in 2 tablespoons of oil. Grate the carrot into larger pieces and add it to fry.
During this time, cut the champignons into strips and put them on the fire. Let it fry for about 10 minutes, then add water and potatoes. Let it cook for about half an hour. Add the spices, mash the potatoes to improve the thickness of the broth and add the whipped cream.
We serve and enjoy this extraordinary low-calorie meal
