Ingredients (4 persons):
16 oz (450 gr.) Tagliatelle (or your favorite pasta)
2 onions ๐Ÿง…
3 stalks Celery ๐ŸŒฑ
2 Carrots ๐Ÿฅ•
17.6oz. half-and-half minced meat ๐Ÿฎ๐Ÿท
2 pork or Italian sausages ๐ŸŒญ
3 cups (700 Ml.) Italian tomato passata ๐Ÿฅซ
14.1 oz (400 gr.) Peeled tomatoes ๐Ÿ…
5.3 oz (150 gr.) Tomato paste ๐Ÿฅซ
Extra virgin olive oil ๐Ÿซ’
1 glas Red wine ๐Ÿท
2 cups Full cream milk ๐Ÿฅ›
Salt and pepper ๐Ÿง‚๐ŸŒถ๏ธ
4 oz (120 gr.) Parmesan cheese ๐Ÿง€

How to cook:
00:09 Dice the carrot
00:40 Slice the celery
00:56 Dice the onion

01:41 Add olive oil to a heated pan (medium heat)
01:52 When the oil is heated, add the onion
02:14 Cook till translucent
02:23 Add the carrot and celery
02:47 Cook for 5 minutes
03:05 Add a zip of the red wine
03:24 Stir and let the wine evaporate
03:36 Add the meat and break it down
04:01 Add salt and pepper to taste
04:20 Cook till the meat is brown
04:24 Add the rest of the red wine
04:40 Let it simmer till most of the moisture has evaporated
05:13 Add the pealed tomatoes
05:29 Add the tomato paste
05:55 Add the passata
06:02 Rinse the bottle with a drop of water and add it
06:17 Stir gently but thorough

06:37 Cover and let it simmer for at least 2 hours on low heat but the longer the better!
06:52 Stir and taste after 1 hour or so
07:12 Add salt and pepper to taste
07:29 (If the sauce is to dry just add boiling water)
07:44 Return the lid

07:50 Remove the lid to let the sauce reduce until smooth
08:02 Start boiling salted water for the pasta
08:10 Add the milk to the sauce
08:34 Cook the paste all dente when the sauce is almost ready
08:40 Save half a cup of the boiling water
08:49 Drain the pasta when ready

08:59 Add the pasta water
09:17 Add the sauce
09:40 Mix well
09:55 All done!
09:59 Serve with cheese and enjoy!
