“Delicious Turkish Simit Sandwiches – A Perfect Snack Recipe!”

**Ingredients:**
– 150 ml lukewarm milk
– 150 ml lukewarm water
– 100 ml vegetable oil
– 1 heaping tablespoon of soft butter
– 1 egg
– 21 g fresh yeast
– 1.5 tablespoons of sugar
– 1 teaspoon of salt
– Approximately 600g (about 5 cups) of all-purpose flour

**For the Topping:**
– 70 ml grape molasses (pekmez)
– 100 ml water
– Toasted sesame seeds

**Instructions:**
1. In a deep bowl, combine all the ingredients except for the butter. Add the flour gradually while kneading. When the dough starts to come together, add the butter and knead until you have a soft, non-sticky dough.
2. Cover the dough and let it rest for 40 minutes.
3. Divide the rested dough into 14-15 small pieces and shape them into oval shapes (see video for reference).
4. Dilute the grape molasses with water. Dip each piece of dough first in the molasses-water mixture and then roll them in toasted sesame seeds.
5. Place the coated dough pieces on a baking sheet lined with parchment paper and let them rest for an additional 20 minutes. Make 2-3 shallow cuts on top of each simit.
6. Bake in a preheated oven at 190 degrees Celsius for about 20 minutes or until they turn golden brown.
7. Fill the simit sandwiches with your choice of ingredients and serve.

“Turkish Bursa Cantik Pide: A Flavorful Turkish Pide Recipe”

**Ingredients:**
For the Dough:
– 300 ml lukewarm water (approximately 1.5 cups)
– 100 ml lukewarm milk (approximately 1 cup)
– 40 ml vegetable oil (about half a cup)
– 7 g active dry yeast
– 550 g all-purpose flour (around 5 cups, add gradually until you have a soft dough)
– 1 teaspoon salt
– 1.5 teaspoons sugar

For the Filling:
– 250 g ground beef
– 2 small to medium-sized onions
– 2 cloves of garlic
– 2 green bell peppers
– 1 small red bell pepper
– 2 medium-sized tomatoes
– 1 heaping teaspoon of tomato paste
– 2 tablespoons vegetable oil
– 1 scant teaspoon of salt
– Red pepper flakes to taste
– 1/2 teaspoon cumin
– A pinch of black pepper

For the Edges:
– One egg yolk mixed with 4-5 drops of water

**Instructions:**
1. Prepare a soft dough by kneading the dough ingredients. It should be slightly sticky to your hands. Let it rest and rise for 45-50 minutes.
2. For the filling, use a food processor to finely chop the onions, peppers, garlic, and tomatoes. Mix this mixture with the ground beef and the other filling ingredients.
3. Grease your hands or lightly dust them with flour to divide the dough into 9-10 pieces. If you are baking in the oven, arrange the pieces on a baking sheet with some space between them. Cover and let them rest for 15-20 minutes.
4. Flatten the dough by pressing the center, leaving the edges higher. Place a generous amount of the prepared filling in the center of each pide. Brush the edges with the egg yolk mixture.
5. Bake until they turn golden brown.
– In the oven: Preheat to 240 degrees Celsius (475°F) and bake with both top and bottom heat.
– In a stone oven: Use the highest setting.
