Our next guest is someone who has worked at multiple 3-star Michelin restaurants, including the famed Le Louis XV, and worked with world-renowned chefs such as Alain Ducasse, Clare Smyth, and Gordon Ramsay, and, more importantly, the godfather to my younger daughter, Damien Leroux.
In the coming three weeks, Damien will show us a range of recipes, ranging from a simple yet perfect salad to making Gnocchi from scratch.
While we met through a close mutual friend a while back, I truly got to know Damien when he moved back to London in 2020. Coincidentally, we lived on the same street in W2. One thing led to another, we started our monthly tradition of taking turns cooking dinner for each other every Wednesday. It quickly became one of the highlights of my week. First and foremost, he was and still is happy to endure my cooking.
More importantly, I get to witness his craft. While there is no doubt his fine dining calibre is as good as any chef out there, what I appreciate the most is what Dam could do with simple dishes and simple ingredients. The first time I truly was in awe of his cooking was when I casually stopped by for wine, and he cooked me a simple pasta that changed the way I cook pasta forever. This is why I selected these simple yet incredible dishes for his guest appearance.
The videos you are going to see in the coming weeks were shot in one session. He landed that day in the morning, had a haircut, went food shopping with us (Becky and Eric, who also flew in to do this for me out of goodwill), then proceeded to cook and demonstrate seven recipes until three in the morning for me and for my channel. Such is the kind of friend Damien is, and I will be eternally grateful for this and his friendship in general. I really hope you’ll enjoy the coming videos.
