Tortellini Soup
1 lb Italian sausage (I used sweet)
1 can diced tomatoes
1 can rotel
4 cups chicken broth
8 oz cream cheese – I used the kind with onion and chive
package cheese tortellini
4 C fresh spinach
italian seasoning
s and p
I also used some fresh basil because I had it in the fridge
1/2 C cream (optional)

4 stars= very good, would add to rotation

Oh my goodness, this recipe has my mouth watering. I'm just coming off a week of a bad upper respiratory infection, and I'm starting to crave hot soups. I'll have to give this a try, but instead of tortellini I may use gnocchi. Thanks for sharing Tammy.
