A light fresh salad of baby leaves and Halloumi cheese

Ingredients:
I’m not going to give exact measurements, as the quantities are dependent on how many people will be eating this salad.

For the Salad
Mixed baby leaves (I used baby spinach, mixed and crisp leaves)
Cherry tomatoes, halved
Cucumber, sliced
Halloumi (I used 2 blocks of the cheese)
Mint, chopped

For the dressing
Fresh squeezed lemon juice
Olive Oil
Black Pepper

Method:
Mix all the leaves, tomatoes, cucumber and mint in a large bowl
Slice the Halloumi, brush with olive oil and griddle on both sides for approx 3 mins on each. Cube the cheese once griddled.
Add the cheese to the top of the salad.
Mix the lemon juice and olive oil in a ratio of 3:4 (3 parts lemon juice to 4 parts Olive oil), grind a healthy amount of black pepper into the mix and mix well, pour over salad right before serving.
