Kent, this reminds me of Steve Reichlen's whole beef tenderloin Philly Cheesesteak. I'm going to try your recipe with a whole beef tenderloin; "roll cut" the meat, instead of straight down the middle, to make a wider thinner piece of meat for the all the veggies.

Fajita is just the way Mexicans call skirt steak, go to any Mexican butcher ask for fajita and you will get skirt steak. It's not some way of cooking just a cut of meat which is typically marinated and grilled on mesquite.
