►Ingredients

►For the Rice

5 cups or 1.2kg Sella Basmati or Basmati rice
Water to soak the rice

►For the Beef Broth/Stock

1 large yellow onion
Whole garlic bulb
20g ginger
1 large tomato
1.5 kg beef with bones or without bones (medium cut not too small)
If using without bones add 300g lamb bones
2 tbsp coriander seeds
1 tbsp fennel seeds
3 black cardamoms
5 green cardamoms
2 tsp black peppercorns
2 tsp white peppercorns
7 cloves
1 cassia bark
1 beef stock cube
1 and half tbsp salt (we will use some later)
Enough water to cover the beef mixture

►For the Main Pilau Ingredients

1 large cooking spoon of sunflower oil
2 large cooking spoons of Ghee
3 medium red onions
1 large tomato
4 green bullet chilies
Mix paste made with 9 garlic cloves, 20g ginger, 1 green chili and some water.
7 and half cups or 1900ml beef stock (cup size UK)

►Spices

3 black cardamoms
1 tsp black peppercorns
1 tsp white peppercorns
4 green cardamoms
3 bay leaves
2 tsp coriander seeds
2 tsp white cumin seeds
2 tsp garam masala
Small piece of nutmeg
1.5 tbsp salt

1 tbsp black cumin seeds to add later

►For the Sauce and Salad

2 tbsp dried plum
1 tbsp dried pomegranate sauce
1 – 2 whole green bullet chilies
Handful coriander and mint
Pinch of salt (taste the sauce and adjust if needed)
Some water
450g natural yogurt

Onion
Tomato
Carrot
Cucumber
Gherkins
Coriander
Spring onions

  1. Hey brother, as always glad to see you still here putting out great vids. I've been slacking in the kitchen for a while, but I really need to find something my dad will eat – he's getting on now and is becoming a really picky eater as he gets older. I've made pilau in the past and it's one of the few non-plain things I make that he will eat (he calls it "savoury rice" for some reason). This is a different level pilau, and I reckon it will go down a treat. Getting some protein and hidden veg from the sauces will do him good.

    You've got your editing down to a science now mate – those chopping cuts are like ASMR for the eyes and ears haha.
