Adore an easy #panzanella as a delish vegan side dish or main – you can add almost anything you want to dress it up (I had cucumbers to use up so I added some).. some like cubes of mozza or chickpeas to make it a meal. Its a wonderful easy “bread salad” that takes advantage of super ripe tomatoes and really makes them shine. Just need some bread (pref day old), ripe tomatoes, basil, red wine vinegar, olive oil and good mustard… capers or olives for a punch of salt, any extra raw veg bits and bobs.. yum!! #panzanellasalad #panzanellarecipe #panzanellalovers #kitchenexperiments
