I’ve been making this exact chicken soup for over a decade now. It’s my go-to recipe when the cold weather strikes and I’m craving something light, brothy, nourishing, and warm. And while many chicken soup recipes often contain pasta noodles, they’re definitely not needed. I swap those out for parsnips which are equally filling, but add a deliciously sweet flavor that works so well with the fresh herbs.

  2. This is off-topic, but I bought your cookbook. There are some recipes with nutritional information. I'm confused, I am on a low sodium diet, so a lot of these recipes are low sodium, or I just change up the recipe a bit. But some are in grams, and some are milligrams. I wanted to make the Tahini sauce, but it says there's 157 grams of sodium? I'm supposed to have around 2000 milligrams a day.

  5. I was wondering if you roasted some of the veg first (parsnips, carrots and onion) if this would enhance the flavour of the soup? I made butternut soup, this time round by roasting the butternut, sweet potato and onions first. The soup tasted incredible vs the boiled veg version, that I will from now (time allowing) always roast the veg first as it makes that much of a difference!

  7. I have been finding that my carrots, celery and parsnips aren't cooked enough…which has been very disappointing. What would be recommended to have my veggies be more tender…not still chewy? Much appreciated. Thank you.

  10. I do NOT recommend leaving the thyme whole. Strip the leaves off. I missed a piece of twig and nearly choked on it. It's not a big deal to pull the leaves off the twigs.

  21. Very good! I made it with one bone in breast and 2 bone in thighs. Takes longer. Used a local meat place that brews their own ‘in house’ chicken broth. Don’t like boxed. Great recipe 👏🏻
