Comfort food changes with the seasons. Warm, comforting meals for the winter season like oxtails and gravy infused with red wine and served over rice or mashed potatoes will fill your home with the smells of comfort. Your family is going to love a bowlful or two

Brown 3 pounds of oxtail with 3 TBL vegetable oil in your InstaPot or a heavy Dutch oven. Once it’s good and brown remove and set aside. Add 1 cup each; chopped onions, celery, red bell pepper, carrots and a couple cloves of smashed garlic to the same pan and cook until till tender. Once tender add fresh herbs like thyme and bay leaves and my European Blend Seasoning. 1 tsp of Salt and pepper 1 cup of red wine and 1 cup of of beef broth. Put your oxtail back in and cover cook in insta pot for approximately 40 minutes on soup/stew setting and let pressure come down naturally. If using Dutch Oven method cook on low till tender, approximately 2 hours.
