INGREDIENTS

Marinated chicken
• 300 grams Boneless Chicken thigh (Diced into bite-size pieces)
• 1/2 tsp Garlic Powder
• 1 tsp Soy Sauce
• Salt and Black Pepper (½ tsp each)

Batter
• 1 egg white
• 1/2 cup Potato Starch
• 1/4 tsp Baking Powder

Sweet Sour Sauce
• 2 tbsp Lemon Juice
• 2 tbsp Apple Cider Vinegar
• 4 tbsp Pineapple Juice
• 4 tbsp Ketchup
• 2 tbsp Brown Sugar
• 1 tbsp Potato starch
• 2 tbsp Sweet Chili Sauce (Optional)

Stir Fry
• ¼ cup Shallots (Chopped)
• 1 cup Combination of any Yellow, Orange, Red or Green Pepper
• 1/2 cup Canned Pineapple (Diced)

Garnish
• Green onion (Chopped)
• Sesame Seeds

INSTRUCTIONS
• Season the chicken with garlic powder, salt, black pepper, and soy sauce. Set aside for 20 minutes.
• Combine the sweet and sour sauce ingredients in a bowl and set aside
• Combine egg white and potato starch with the marinated chicken. Mix Well.
• Deep fry the chicken in hot oil at 330°F for 3 to 5 minutes or until they turn pale brown. Make sure to separate the chicken pieces so they do not stick together.
• Turn the heat off, remove and cool down the chicken for 15 minutes.
• Heat the oil at 360°F, and refry the chicken until they turn golden brown about 1 to 2 minutes.
• In a wok or pan, add 2 tbsp of oil and sauté shallot and peppers over medium-high heat until they are slightly tender.
• Pour the sauce and stir until it starts bubbling. Add the chicken back and stir for a minute. Turn the heat off, add the pineapple, and stir to make sure all of the ingredients are coated with the sauce.
• Garnish with chopped green onion and sesame seeds.
