Ingredients:
• 6 slices of Bacon
• 2lbs, 8oz of diced potatoes
• 4 scallions, chopped
• 4 hard boiled eggs
• ¼ cup pickled jalapeños
• 3 tbsp Mustard
• 1 cup Mayo
• 3-4 sweet gherkin pickles
• 2 cups shredded cheddar cheese

Directions:
1. Place 6 strips of bacon on a cool griddle and then turn your burners on medium heat. Cook the bacon to your liking.
2. Add 4 chopped scallions, 4 diced hard boiled eggs, 1/4 cup pickled jalapeños, 3 tbsp of mustard, 1 cup of mayo, and 3 diced sweet gherkin pickles in a bowl and mix.
3. Cook your potatoes on your griddle and season with Heath Riles BBQ Garlic Jalapeño Rub.
4. Add cooked potatoes, chopped bacon, and 1 cup of shredded cheddar cheese to your potato salad. Season with Heath Riles BBQ Garlic Jalapeño Rub and mix.
5. Place potato salad in the fridge to chill for a few hours or eat it hot. However you prefer it.

  2. You can use flour to dust over your bacon on both sides and it's not supposed to curl up.
