Applesauce Oatmeal Raisin Cookies

½ Cup (1 stick) Unsalted Butter, soft (4 oz)
½ Cup Canola Oil
1 Cup Light Brown Sugar (8 oz)
1 ¼ Cups Applesauce
1 teaspoon Vanilla Extract
2 Cups All Purpose Flour (10 oz)
1 teaspoon Baking Soda
1 teaspoon Ground Cinnamon
½ teaspoon Ground Ginger
¼ teaspoon Salt
2 ½ Cups Quick Oats (9 oz)
1 Cup Raisins (5 oz)

1.Heat the oven to 350°F.

2. In a stand mixer with the paddle attachment, beat the butter until smooth, add the sugar and combine until light, add applesauce, and vanilla, scrape down the sides of the mixing bowl with a spatula.

3. In a large bowl combine flour, baking soda, cinnamon and salt; mix well stirring with a wooden spoon.

4. Add flour mixture to butter mixture, add oats and raisins. Use an ice cream scoop to drop dough onto a parchment paper or silicone mat lined cookie sheet. Bake for 11 to 13 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
