Take your winter salad to the next level! This hearty dish features a delicious combination of two types of lettuce, sweet cranberries, crunchy apples, and toasted walnuts, all dressed in a honey mustard vinaigrette.

WINTER SALAD RECIPE

1 large heart of romaine lettuce, chopped
1 head of radicchio, cored and chopped
1 medium Gala apple, peeled, cored, and cut into 1/4” cubes
1/2 cup dried cranberries
1/2 cup walnuts, toasted, then roughly chopped
1/3 cup crumbled goat cheese

Honey Mustard Vinaigrette
3 tablespoon apple cider vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup olive oil

INSTRUCTIONS
To prepare the vinaigrette:
Place all of the ingredients into a mason jar and shake well. Check seasoning and adjust to taste if needed. Set aside.

To assemble the salad:
In a large bowl, add the lettuce, apples, cranberries, walnuts, and goat cheese. Drizzle with desired amount of vinaigrette and serve immediately.

*You may have leftover vinaigrette. Refrigerate in an airtight container for 3 days.

  2. had to go to her website to figure out how much ingredients to use to make the dressing, a large page with many items on where's waldo, could not find so estimate I guess.
