This hearty, meaty chili will fill up the hungriest of appetites. This recipe makes a big ole batch of chili. This recipes contains 4 lbs of meat! 3 lbs of ground meat and 1 lb of chuck roast or stew meat. I love this recipe with venison instead of beef as well. Any combo of meats works but having plenty of ground meat plus some large chunky meat that will break down and get super tender during a 6-8 hour cook is the best.

If you want to try this recipe with venison, but don’t hunt, our friends at Maui Nui Venison sellship amazing Axis deer meat. It’s the one of the cleanest tasting game meats and nutrient dense!

This recipe will require a large slow cooker or dutch oven. It has a medium spiciness level. You can adjust that by adding more or less chili seasoning.

  2. Good video.. I typically do Wazzu Chili which is similar 1 lbs of ground beef and 1 lbs of ground pork havent tried sausage. Dont typically do raw onion at the end but overall this is something I might try. Up here in MI we do beans… So I usually do some black and red chili beans….

  3. THIS is the chili recipe I've been looking for… not for the debate of beans or not… but, for how it's put together with different cuts of meat. It's not flat with all ground beef as a base… But, combining ground beef with seasoned sausage, and then adding sliced pieces of smoked steak, is genius. Multiple levels of texture and flavor is a winner. Some folks are commenting about the spiciness, but, I'd tone it down a bit so I could enjoy more of it. This will be an RV camping recipe to try soon… with the chili in the crock pot while I slow cook a steak on the charcoal grill to cut and add to it. Cornbread muffins or campfire russets would be perfect as sides. Congrats on the busy cooking meetings with the teams, and the re-grand opening of the place.   4. How do you ruin this chili for folks that like thier chilli with beans?
    I mean, Without contaminating the rest of it? Or stewing a pot of beans specifically for people that like thier chili wrong.
    Is there any easy way?

    Bit of a disagreement between me and the Mrs.
    And i might be using this recipe after christmas…
    I predict i'll have a few leftover slabs of smoked prime rib, and a rack of meaty beef rib bones i can use in something like this.

    Anyone add canned pintos or? To a serving of chili post cook?

    Cause I ain't ruining a "pot o' red" with beans. No sir.

  5. Matt might not be a world famous chef like Bobby Flay. But I just watched this man make a crazy pot of chili. Then he proceeded to eat it out of a dog bowl.

    Until this video I didn’t even know $40 insulated dog bowls even existed. And I’m trying to wrap my head around why they are even a thing lol.

    But now I gotta go order the MC Chili seasoning and maybe even a fancy Yeti Dog Bowl to eat it out of.
