🥣 Ingredients:
3 sweet potatoes
salt to taste
black pepper
1tbsp agave syrup (use honey or maple syrup as an alternative)

🥣 Filling ingredients:
3 Portobello mushrooms
3tbsp balsamic vinegar
1 finely chopped garlic clove
1 diced onion
300g | 1 1/2 cups raw green lentils
800ml | 3 1/3 cups vegetable stock
1tbsp Italian herbs
1/2tbsp Korean chilli flakes (Gochugaru)
300g | 2 cups frozen mixed veggies

🧑‍🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗You can substitute Portobello mushrooms for the different type of mushrooms or aubergine.
❗You can substitute agave syrup for honey or maple syrup.
❗ If you cannot find Korean chilli flakes gochugaru you can substitute it for crushed red pepper flakes or cayenne pepper.

🥣 Method:
Peel and cut 3 sweet potatoes.
Place cut sweet potatoes in a pot.
Add water and add salt.
Bring to a boil and simmer until tender.
Slice 3 Portobello mushrooms.
Pour 3tbsp balsamic vinegar.
Add 1 finely chopped garlic clove.
Mix well and set aside for 10 minutes to marinate.
Place cooked sweet potato into a bowl.
Add black pepper and 1tbsp agave syrup.
ℹ️ You can use honey or maple syrup as an alternative
Mash with potato masher or fork.
Heat a little oil in a skillet.
ℹ️For oil-free version use water or vegetable stock.
Add diced onion and 1 finely chopped garlic clove to the skillet and cook on medium heat for about 5 minutes.
Add 300g | 1 1/2 cups raw green lentils.
Pour 800ml | 3 1/3 cups vegetable stock.
Season with 1tbsp Italian herbs and 1/2tbsp Korean chilli flakes (Gochugaru).
ℹ️If you cannot find gochugaru, some alternatives include crushed red pepper flakes or cayenne pepper.
Mix well, cover with lid and cook for 15 minutes.
Heat a little oil in a skillet.
ℹ️For oil-free version use water or vegetable stock.
Place marinated Portobello mushrooms in a skillet and cook for 3 minutes.
Flip carefully and cook for another 3 minutes on other side.
Add 300g | 2 cups frozen mixed vegetables to the lentils mixture.
Cover with lid and cook for another 10 minutes.
Transfer cooked lentils and vegetables mixture to a baking dish.
Top with Portobello mushrooms and mashed sweet potato.
Smooth down with a spoon.
Bake in the preheated oven at 425F | 220C for 20 minutes.
Serve with chopped green onion and chilli flakes.
