At NYC’s Saigon Social, chef and owner Helen Nguyen makes her own pho broth using oxtail, brisket, beef shank, and dry-aged rib bones that she butchers at Pat LaFrieda Meat Purveyors’ warehouse every 10 days. The meat is used in dishes like oxtail fried rice, shaken beef steak, and more.

  1. This should be taught in every primary school, such a broth is the key to good health, thanls to colagen and other good stuff, and you can make so many things with it, soups, gelatine etc. Been doing for years, I love it…highly recommended!

  2. A bit unrelated but hopefully someone could provide me an answer: were the impurities dirty? IBasically, I was thought that we boil meat and stuff to get rid of impurities along the line that they are not good for the body? i imagine that some of the skim were from blood and all but we're they also "toxins" from the meat?

  3. Wow, that dedication and love. I love pho and this brings a tear to my eye to watch. Next time I'm in NY I want to try her pho. Also, I love that she questioned why her stock changes from day to day. My favorite pho places are usually good but I do notice the stock isn't consistent and can vary from decent to amazing.

  6. Sometimes if feel, America has ruin Phó and turn it into a water down white wash westernized Phó, that use to be common people food now turn to this extravagant flamboyant generic Vietnamese food.

  8. she could have blanched the bones a bit and she’ll have a clearer broth. Also pho doesn’t have to be too complicated to taste good. I am curious what her bowl tastes like. Although I like mean clearer.

  9. Fried rice looks very greasy. Correct me if I’m wrong. Maybe add some type of pickle to cut down the fat Pickled Carrot/radish or Japanese pickles plum. Or fried garlic chips.

  11. I liked watching LaFrieda's show. I think it was called MeatGuys or Meat Men? It was entertaining. I dont know why it only had 1 season. Theres a few episodes on Youtube
