  1. My personal preference is egg based pasta if homemade. My mother always made egg based pasta, rolled by hand with a broom handle. Still remember the giant circles of dough drying on a white sheet of my Nonna's bed. Big difference in taste between egg based and semolina. Don't think that egg noodles are inferior to semolina noodles. Just different. Also you just freeze stuffed noodles. Una Calabresa, who now lives in Canada where we grow the best wheat in the World 🌎

  4. Thank you for showing how to make pasta eggless. I never liked eggs and now being vegan much less. I add a touch of olive oil to the water to replace the fat of the egg and it makes it so much better than without it.

  6. We went on Amazon to order this semolina flour and after reading numerous reviews from different suppliers, we decided against it. Too many complaints about bugs, torn bags, damaged boxes, and some said they weren't allowed to return the product. Do you have a supplier you'd care to recommend? And, when is Eva going to do a video on recipes for stock fish, like the Cod from Norway? I've been waiting quite a while…

  7. I would love you to make gluten free lentil pasta. I know it is a thing as I get a brand that comes from Italy. It’s expensive and I would like to make my own. It’s great for vegetarian meals as it adds protein to the diet.

  8. Before I converted to a Carnivore diet, I used to make "water" pasta more than "egg" pasta as I could easily dry it as well if I had too much. Was delicious with olive oil and some coarse black pepper, fresh parsley and coarse ground Himalayan salt

  11. When you are making fresh pasta – egg or non egg based pasta, how do you know when it is cooked aldente? How do you know the tempo di cottura ?

  12. LOL! I was hungry and didn't like how my dry semolina pasta turned out, because it seem to want to take an hour to cook. Well, being hungry and semolina was all I had on hand, decided to cook it fresh and have loved it ever since.

    My oldest boy dated a girl who was vegetarian all through high school.
    Found a recipe from 1996 on YouTube, I believe southern Italy.
    …he said find the smallest most red tomatoes you can find. Made a pesto with Almonds olive oil basil.then also mashed in small tomatoes.and the cheese
    I do this in a blender now during the summer in Alaska.
    Can you please find the original type recipe?
    We use whatever pasta.
    It is a summer staple.
    Would love to see your guys take on it and so I can write an actual recipe down for my kids and family.
    Oh yes, their was garlic as well.
    I remember the video was in Italy 1996
