BUTTERNUT SQUASH ROASTED RED PEPPER SPAGHETTI SAUCE WITH SAUSAGE WEIGHT WATCHERS ONLY 5 POINTS

Ingredients
1 Butternut Squash
1 Roasted Red Pepper
1 Small Spaghetti Squash
2 oz. cooked Spaghetti
2 Cuos Zucchini Noodles
1 Cup Water
Salt/Pepper to taste
1/2 teaspoon fresh nutmeg
1 teaspoon chopped garlic
1/2 teaspoon Sage (optional)
1 Al Fresco Sausage sliced.

Roast the Spaghetti Squash and the Butternut Squash in a 385° oven for about 45 minutes or until done.
Cook the Spaghetti Pasta (I used Whole Grain)
Roast the Red Pepper in the air fryer till charred.

In a blender, blend the Butternut Squash, Roasted Red Pepper, water, garlic and spices.
In a fry pan first spray and add the sliced sausage, then the Zucchini noodles and cook for about 5 minutes to get the Zucchini soft. Add to the pan about 1 cup or so of the Cooked Spaghetti Squash and the 2 oz of the cooked Pasta. Heat well through. Add about 2 or more cups of the Butternut Squash Sauce, stir, add more water to thin out (optional). Serve and ENJOY !!!

  1. Oh my goodness…that looks delicious! I admit I couldn’t help chuckle at minute 13:52 when you said a muffled “hot”! I burn my tongue and taste buds more times than I can count!
