  2. Love your recipe. Just want to add that a spoon used to swirl the meringue and pick up often to form small peaks might be easier for you.

  5. Looks absolutely delicious. thanks for keeping it really. You answered my long going question with my soggy pie issue. I think its because I've been meeting my pudding cool in the shell first. Need to put my meringue on the pie while it's warm. Thank you!! I can almost taste it when you place the slice onto the plate! 🙂

  6. My daughter and I tried to make this pie… and we cooked it too long in micro.. next time will start for 2 min at a time. It was delicious anyway… trying again next week

  7. Looks really really good. And yep it’s on list to bake. Thanks for the info about the weeping. Over the years I’ve eaten more than one cream pie and banana pudding that were wet and now I know why.

  9. I specifically looked up your coconut pie recipe, I’ve used a few times- excellent. Respectfully, your top coconut burns because you’ve pre-toasted what is garnished on top and rebaked. If you use un-toasted on top, they won’t burn. Of course, you will toast what you use inside the coconut cream filling. Just my experience in 67 years of cooking – I’m 73.
