Ingredients:
16 oz fresh spinach and mixed greens
16 oz fresh strawberries, sliced
1/2 cup blue cheese crumbles (goat cheese, feta or gorgonzola)
1/2 cup chopped pecans
Homemade Balsamic Vinaigrette Dressing:
1/2 cup olive oil
1/3 cup balsamic vinegar
2 tsp maple syrup
1 tsp dijon mustard
salt and pepper to taste
Directions:
Whisk together the dressing ingredients until fully combined.
To make the salad, combine the spinach and mixed greens, topped with sliced strawberries, pecans and cheese of choice. Enjoy!
