My dad makes a grilled potato salad, slices and smokes/grills the potatoes, mix with mustard mayo, seasonings, add bacon and bleu cheese, delicious

In my country, we make the same salad as the 2nd one, but we don’t use sour cream or mayo, we just use fresh olive oil. IMO it’s much tastier and tastes fresh and luxurious.
My old boss always let his potato salad set for a day before he severed it and it did make a difference. Best potato salad ive ever had

I always thought they let the potato salad rest for 3 days. As in they fully made it with everything, then let it sit for 3 days before they ate it.
Which is sort of true. I always think 'old' potato salad tastes better than fresh ones.
