Ingredients: – green olives (I love @gaeagreece_usa) sliced – coconut aminos – 5 cloves garlic minced (or to taste of course) – cashew cream (1/2 cup raw cashews blended with 3/4 cup water) (if not using high speed blender soak cashews overnight in water) – 12 oz gluten free pasta ( using @jovialfoods brown rice capellini) – fresh cracked pepper and salt
Directions: 1. Bring a pot of salted water to a boil and cook pasta as directed on package. Set aside about a cup of pasta water. PS if your salted water doesnβt taste like the ocean you are missing out!! This seasons the pasta within. 2. Over medium heat in nonstick pan, add a splash of water to prevent sticking. Then adding in garlic, cooking until fragrant. About a 30 seconds to a minute. 3. Turn heat down to low and add in cashew cream. Season with fresh cracked pepper, a couple dashes of coconut aminos, and salt to taste. 4. Stir in pasta adding in pasta water as needed to make things nice and creamy. Turn heat off and stir in your olives. Taste and season more to your liking if needed. 5. Serve and top with more olives if you are feeling wild like me.
