I couldn’t resist calling these Filthy with all that gorgeous Bacon fat, and indulgent dressing, Spring Onions and Chives. They are so moorish with the crispy exterior and fluffy insides. The Whipped Feta dip was creamy and tangy so a perfect combo.

Foreign Hi everyone and welcome back to free from lifestyle I hope you’re all really well thanks for clicking on this video and if you’re not subscribed then please remember to do that down below so today as you just saw I’ve made my roast chicken again this is becoming a habit

It’s once a week now that I buy a large chicken and I cook it in this way if you haven’t seen the video of how to make it super delicious then just use the link above I’ll put that up there now for you and it will also be in the description

So to go with my roast chicken for dinner tonight I’m making what I’m calling filthy potatoes oh these are so good they’ve got crispy bacon they’ve got a nice dressing they’ve got some other little bits I’m going to show you how to make those and then alongside it

I’m also going to make some whipped feta I think it’s going to be absolutely delicious here’s my chicken this is cooled down now I like to make mine in the morning just so that I can get organized or listen to this look at that crispy skin that you can eat I’ve got

Olive oil and salt on that skin as well oh delicious but let’s get going with the potatoes so I thought I’d start by showing you what you’re going to need and how we’re going to make these so the thing that makes these really delicious is bacon lardons and we’re going to cook

These so that they are so crispy the Fat’s gonna render out and these are going to be beautiful mixed in with these gorgeous filthy potatoes then I’ve got spring onions mine are like this because I’ve picked these out of the garden so a little bit dirty so

I’ll give them a wash give them a chop go grab some Rosemary out of the garden as well and we’re going to use some oil I’m gonna get that really hot for these potatoes so I’m going to peel these parboil them so before we do anything let’s get the kind of sauce dressing

Whatever you want to call it so we’ve got some light mayonnaise in here and then into that I want to put some honey like that and then I’ve got two different mustards I’ve got a whole grain mustard you don’t have to use two different ones I just

Quite like the the difference in the in the texture on those and the flavors so whole grain and then some Dijon there you go so really you can make that as as hot as you want to but give that a nice mix and we’ve got a lovely sweet but mustardy mayonnaise dressing and

That’s gonna work so well in this dish I’m parboiling the potatoes on the hob and they’re just gonna have five minutes in there then we’re gonna fluff them up and let them cool down before we put them into the hot oil drain the potatoes and we’re just giving them a few edges are going nice nice fluffy so they are perfectly

Parboiled five minutes no longer now I’m just gonna let them cool on a rack so there they are they’re just cooling off and look how fluffy they are absolutely perfect for this dish now I’m gonna go over to the ninja and get the bacon lardens really crispy so I’m on Sear and

Saute and that’s gonna get this bacon lovely and crispy we’ve got a little bit of olive oil in here as well just to help them along the way there’s quite a lot of fat in here so I’ve only put a tiny bit of oil in this is a smoked bacon and I always

Choose a smoked bacon I just love the flavor of that now I’ve got this on level three so a medium heat and that’s really starting to Crispen up any higher than this it just starts sticking and burning and so you want to be on that sort of level nothing crispy

I wanted it so I’m going to pop that in my bowl and I’ll be ready for later on I’m going to leave the fat that we’ve got out of the bacon in the pot because that is going to be absolutely perfect for creating beautiful roast potatoes now

We’re moving on to make the whipped feta you can actually buy this now in a lot of supermarkets I think the Tesco’s do it but it’s quite easy to do so why not have a go and make your own I’ve got a blender here it doesn’t need to clearly

Be this big but it’s the only one I’ve got and I’ve got in here my yogurt and my feta ideally you want a thick Greek yogurt but you can give it a go with dairy free options if you need okay we’re gonna use a lemon here give that a good squeeze

I think half a lemon I’m gonna go with and if we need more then we can always add it okay so lemon juice that goes in here and then we want some good olive oil ideally some extra virgin olive oil if you’ve got it and we need two tablespoons two one

Two it’s gonna make it lovely and Rich then we want to season this with some black pepper and I think this is going to be gorgeous with those potatoes and that roast chicken tonight there we go I added a tiny little bit more lemon but

Not a lot and look at that let’s serve that up in a bowl okay now we can just scrape that the serving Bowl there you go there is my whipped feta totally optional but you can add some chili flakes or like me a little bit of chili powder over the top these boards

That I use by the way are the Joseph Joseph ones and I’ve tagged those below for you because these are so good they come in a set of four and you can use them for different things I use one for chicken one for veg Etc make sure that everything’s really hygienic so these

Are a great purchase so I preheated my ninja with some extra oil and it’s got the fat in there still from the bacon so it looks a little bit messy and dirty that’s just from the bacon so I’m gonna pop in some fresh Rosemary and some garlic you can hear that starting to

Sizzle and nice and veggies it’s toss those in I’m gonna move them about in the oil just to get some oil around the edges it’s gonna help them cook better we’re also going to give them a toss around when they are sort of five minutes in 10

Minutes in these are probably going to take around 20 25 minutes so let’s get those on to bake so let’s turn that down to bake we want the temperature up I’m going to cook them on 200 and let’s go for 20 minutes and we will check them

We’ve got our bacon that we cooked earlier which is beautifully crispy look at that yum and that’s going to go on the potatoes with the dressing and we’ve got some spring onions and some chives as well potatoes are looking really really good now to put in the bacon pop in the spring onions

And I’m chives so I’m just going to just literally just randomly chop with my scissors here okay so chives are in a little bit of sea salt to these finally we just have the dressing to add to them so that is dinner completed we’ve got these gorgeous crispy potatoes that

Dressing is going to make them taste so good with the bacon the spring onions and the chives look at that juicy chicken I cooked earlier and the feta dip really looking forward to dinner tonight Um that’s a bit weird foreign
