Ingredients

  • 6 to 8 quinces
  • Lemon juice
  • 1 cup sugar
  • ½ cup lightly salted or unsalted butter
  • ¼ cup heavy cream
  • Cream and sugar for passing

    6 to 8 servings

    Preparation

    1. Preheat oven to 375 degrees.
    2. Peel and hollow out cores of quinces, being careful not to pierce bottom of fruit.
    3. Sprinkle each with lemon juice as you go.
    4. Stand quinces in buttered gratin dish.
    5. Mix together to a cream 2/3 cup sugar, 1/2 cup butter and 3 generous tablespoons heavy cream.
    6. Stuff quinces with mixture; if some is left, add halfway through cooking.
    7. Top each quince with sprinkling of sugar.
    8. Bake 1 hour or until quinces are tender.
