Osso Buco MeatAroundTheWorld style

Ingredients
2kg beef shanks
flour
2 big white onions
6 cloves of garlic
4 carrots
2 celery sticks
1 bell pepper
2 cups of dry white wine
thyme, rosemary, salt, pepper, paprika, cloves, bay leaves
1 can of tomato purée
1 can of diced or whole tomatoes
2-3 cups of beef stock
Worcestershire sauce
balsamic vinegar
parsley
lemon zest

Instructions
Coat meat in flower
Sear the meat until brown
Brown onions
Add vegetables
Extinguish with wine
Reduce wine to half before adding other liquids
Add spices, tomatoes and stock
Add flour to thicken the sauce but not too much
Put the meat in the sauce
Simmer for 2-3 hours
Add balsamic and Worcestershire sauce and maybe more salt & pepper
Add parsley and lemon zest at the end before serving
