BUTTERNUT SQUASH SPAGHETTI 🍝 This wholesome and hearty recipe is perfect for the holiday season! INGREDIENTS:
Diced and Skinned Butternut Squash (3 Cups)
Diced Apples (2 Cups)
Diced White Onions (1 Cup)
Herbed Poultry Seasoning (¼ Cup)
Fresh Rosemary (6 Sprigs)
Mother Raw Mediterranean Dressing (1 Cup)
Hummus (2 Cups)
Vegetable Broth (1-2 Cups)
Coconut Milk (1 Cup)
Vegan Cheddar Cheese (2 Cups)
Spaghetti Noodles of Choice (1-6 Cups)
Salt and Pepper to Taste
Chopped Green Onions (¼ Cup)

INSTRUCTIONS:

1. Skin and dice the butternut squash and the dice fresh apples and white onion,
2. Add diced vegetables to a covered baking sheet and season with herbed poultry seasoning and fresh rosemary. Bake seasoned vegetables at 400F for 25-35 Minutes or until the quash is soft and fully cooked.
3. Once the vegetables are soft and baked remove the rosemary sticks and add the cooked vegetables to a blender and add Mediterranean dressing, hummus, and a splash of vegetable broth into the blender as well. Blend together until smooth, creamy, and add in more vegetable broth if needed.
4. In a large pot heat up the blended vegetables and mix in coconut milk and vegan cheddar cheese.
5. Serve the butternut cheese sauce with cooked spaghetti and top with chopped green onions.
