RECIPE 1 –

Creamy Chicken Cranberry Nut Salad.

Indulge in this luxurious creamy chicken cranberry nut salad – a personal favorite that’s both filling and perfect for various occasions. Plus, it’s keto-friendly, making it an ideal treat for your keto guests this festive season.

Here’s how to make it:

1. Cook two chicken breasts in extra virgin olive oil or butter until golden. Set aside to rest and later chop for the salad.
2. In a large bowl, mix around 4 chopped celery sticks, diced white onion (or spring onions for extra flavor), and a generous amount of cranberries for that sweet and festive touch.
3. Add chopped walnuts, pecans, and flaked almonds to the bowl, followed by the chopped chicken.
4. Now, let’s make the sauce. Combine creme fraiche, lemon juice, and finely chopped dill in a bowl. Feel free to add mustard for extra flavor, but skip it if there are any allergies.
5. Pour the sauce over the salad and mix well. For an extra creamy touch, top with crumbled goat cheese. Serve it on its own or on a bed of arugula salad.

Enjoy this delightful dish as a starter or side. It’s a versatile addition to your festive buffet table!

  2. Thank for all your great recipes. I have one for you. With seedless dates cut open put peanut butter and a whole slice of pecan or walnut and sprinkle with powdered sugar. Great healthy dessert with no baking. Love your videos

  3. Wow, Fern! These look scrumptious, I cannot decide which one looks more appealing, I will definetly try all of them!!! Superb! Thank you so much for posting these!!!❀❀❀

  4. Good afternoon how ridiculous it seems sometimes my postings. I just noticed that the first time I tried to post it got tucked into one of your comments. So this is the second time I've said basically the same thing you must forgive me for that but I feel that YouTube seems to have problems getting it done. Funny the first attempt is hidden. ( things are getting better. Thanks for your πŸ™ s!) Not super fond of the strong flavor of Fennel, honestly. Interesting idea of the roasting. It is not @ all common produce in our shops. Maybe I will try it in the new year. I have made Stilton stuffed Medjools. Love dates and blue cheese. You have taken it to a new Epicurean level! Looks wonderful! Also salad looks scrumptious! I am glad that we have winter which makes so much slower times outside that such terrific recipes might be tried then. Christmas is such a busy time of year! Thank you so much!! If the Sun is out we only have just over 8 hours. Christmas lights πŸŽ„βœ¨ are so welcome.

  9. Deeeeeelish!! And you are right – so simple, but so scrumptious. Crunchy, wholesome, a touch of sweet and so nourishing. Thank you, Fern! ❀

  10. I love when you post recipe ideas, because the things you like are so similar to what I like. I would love every one of these – especially those DATES! Also, your chicken salad looks incredible, and I just wanted to suggest trying green onion in place of white onion. It's a lot milder and I think you'll like it in salads. I'd love to know what you're making for your Christmas meal. Thanks for all the great ideas!

  11. I love when you share your cooking videos! And these look soooo good! Good to see you doing homemaking…you make it look so elegant! ❀😊
