Of olive oil lemon juice and chicken stock preheat your oven to 450° F start by squeezing the juice of one Lemon In a bowl combined of olive oil chicken Broth lemon juice kosher salt oregano and ground black pepper peel and cut your potatoes into quarter Pieces toss the potatoes in the liquid to coat then arrange the potatoes with the liquid in an even layer cut sides Down roast the potatoes until fork tender dark brown and crispy on top about 30 minutes if the potatoes are cooked through but not as crispy as you’d like run them under the broiler for a few minutes let’s give these a try so the potatoes soak up the flavorful liquid and leave the inside
