This irresistible cherry cranberry pie filling has all the incredible aroma and flavour of the holiday season, making it the perfect filling for your holiday pie. Let’s go ahead and make it together. So pause this video grab your mise en place, and I’ll meet you back here when you’re ready.

The first thing that we’re going to do is to grab our tapioca seeds. They’re also called seed tapioca. They’re going to act as the most incredible thickener for your pie, and you won’t even notice that they’re there. So what I find best to do is just to soak the seed tapioca

While I’m preparing all of the rest of my ingredients. And that way, they’ll be a little soft to start off. This just gives them a little bit of a boost to kind of activate it and allows it to absorb the liquid from our cherry pie filling a lot quicker.

But it also washes them, which is nice, too. Next, grab your frozen cherries and frozen cranberries, and I recommend if you can get your hands on different varieties of frozen cherries. The flavour is just incredible. So we’re going to bring these on over to the stove and heat them up.

So we’ll just add our frozen cherries directly into the pot. I like to use a pot that’s quite large in diameter. So turn on your stove to a medium high heat and then add in your lemon juice. I use freshly squeezed lemon juice from about half of a large lemon,

Some freshly grated ginger. And then we’re going to throw in our pumpkin spice mix. And this is just an incredibly delightfully smelling and tasting mix that I mixed up on my own. If you’d like to make your own along with me, you can find my recipe on my channel.

Give it a little mix. Once you’ve got it all mixed together, cover it up and give it a few moments to start releasing its liquid, making sure to give it a mix every few minutes. You can see the liquid starting to get released and then covering it back up. Remove the lid.

So after 3 minutes, you can see that this is how mine looks. There’s a lot of liquid that’s been released and now I’m ready to add my sugars. So I add a little bit of cane sugar and some lovely dark brown sugar.

Dark brown sugar has a lovely molasses flavour to it, and I just find it complements the cherries and cranberries and all the spices beautifully. So you’re just going to give it a nice mix, make sure it’s all incorporated. At this point, make sure you turn the heat down as

You want it to just be gently simmering, not boiling really hard. So just turn down the heat until you can get it to this perfect little simmer. Then I just take the tapioca seeds that have been soaking, and I just use a fine mesh strainer and pour out the liquid.

And then we’re just going to add these tapioca seeds directly in. And don’t worry, you won’t even notice the tapioca seeds in your pie once it’s cooked. They take on the flavour of the pie, and they are just incredible at thickening. And they’re quite lovely texture.

So now we’ll just let it simmer and reduce down into a beautiful, thickened cherry pie filling. But of course, we’re going to need to taste it to make sure it has the right amount of sugar and spice for your family. And the tapioca balls will still be hard at this point.

So if you taste one of those and think, oh, I don’t want that in my pie. Don’t worry, it will become completely translucent and you won’t even notice it in your pie. Mmm…mine’s just perfect. I just love the mix of the sweet

And tartness of the cherries and the sour tartness of the cranberries. It’s so incredibly delicious. And it’s such a holiday season flavour. Your house will smell so incredibly delicious. Everyone will be salivating, waiting for their holiday dessert. So after reducing for 30 minutes, you can see it’s

Now become nice and thick and looks a lot more like a cherry pie filling. Once this cools, it’s going to thicken even more. So now I’m just going to turn off the heat and remove it from the heat. If you are not in a hurry, you can just let your beautiful

Cherry cranberry pie filling cool on the countertop at room temperature. However, if you just want to get baking, you’ve got your pie crust ready and you just want to put it on in there and bake it up. We don’t want to put the hot cherry cranberry filling directly into your unbaked pie crust

Because what will happen is it will get soggy at the bottom. So we want to cool it down first. So I fill a large bowl with ice, then water and make a nice ice bath for my pie filling to sit in. And then I just directly put my pot into there.

Kind of like the opposite of a double boiler. It’s like a double cooler. So then I just keep mixing it and you’ll notice that it starts to cool down right away and you want to make sure it’s actually sitting in the water. But of course that the water doesn’t come up over

Into your beautiful cherry pie filling that you’ve worked so hard to make. Oh, boy, does this ever smells so good. So just give it a stir. You can see right away how much it’s thickening already. It is really thickening. It’ll continue to thicken as it cools. And I just find placing it

In the cold water like this really helps to speed up the process. If you’re making this cherry cranberry pie with my gluten free egg free pie crust, just make sure that it stays in the refrigerator until your filling is nice and cool.

So mine has now been chilling for over an hour. And you can see my filling has cooled nicely and you could see how nice and thick it is here. It’s lovely and thick. And when I touch it, I can feel it’s nice and cool.

So the first thing I’m going to do is put on an apron because I do not want to get cherry pie filling all over my clothing. But we’re going to put that filling right directly into our pie. And you can see the little tapioca balls,

But you definitely won’t be able to taste them. And then we’re just going to spread it out into our pie. Oh, my goodness. It looks so delicious. If you’re kind of particular, you accidentally dab some cherry filling onto your pie crust. Just use a clean, wet cloth and dab it right off.

My finishing touch to this pie is to add some candied ginger and I just like to sprinkle it all over the top. Don’t go away. Stay tuned because coming up next, I’m going to show you how to easily use my gluten free egg free pie dough to make a beautiful lattice top.
