Easy Gnocchi w/ Brussels Sprouts, Meatballs, and Pesto
Ingredients:
1 jar of pesto
1 pack of gnocchi
1 pack of sausage
1 bag of brussels sprouts
-Chop the woody end off the brussels sprouts.
-Cut the brussels sprouts in half.
-Decase the sausage.
-Form sausage balls.
-Start water boiling (add salt)
-Brown the sausage balls.
-Remove the sausage balls and add the brussels sprouts.
-Turn the brussels sprouts flat side down and brown.
-Add 1-2 TBSP of water to deglaze the bottom of the pan.
-Cover with lid to finish cooking.
-Add the meat back.
-Put the Gnocchi in the boiling water.
-Once they float, strain and add to the pan.
-Empty your jar of pesto and mix.
-Add parmesan cheese as desired.

Homemade Gnocchi
Ingredients:
4 Large Potatoes
1 Egg yolk
100g of flour
(you can add a sprinkle of salt)
-Bake the potatoes.
-peel the potatoes.
-rice the potatoes.
-Add the egg yolk and flour.
-kneed for a few minutes until incorporated.
-roll into logs.
-cut into 1 inch pieces and shape.

Simple Pesto
Ingredients:
2 Cups of Basil leaves (no stems)
2 TBSP of Pine nuts
2 Large cloves of Garlic
1/2 cup of Parmesan cheese
1/2 cup of Olive Oil
-combine all together in a food processor.
