Ingredients:

1 1/2 cups of canned pumpkin
1 1/2 cups of granulated sugar
1/2 cup of canola or vegetable oil
3 large eggs
2 cups of all purpose flour (2 tablespoons less)
1 1/2 tsp of baking powder
1 1/2 tsp of salt
3/4 tsp of cinnamon
1/4 tsp of nutmeg

Topping (optional)
1/2 cup of sugar
1/3 cup of flour
1 1/2 tsp of cinnamon
1/4 cup of softened butter

Hello and welcome back to in the kitchen with Matt I am your host Matt Taylor today I’m going to show you how to make a pumpkin muffins mmm super yummy if you watch my video on pumpkin cake donuts this is extremely similar exact same recipe let’s get started

First let’s preheat the oven to your 350 degrees now what we’re going to do is we’re going to go ahead and take one and a half cups of canned pumpkin just go ahead and put that in this bowl 1/2 cup of vegetable or canola oil one and a half cups of granulated sugar

And three large eggs okay then we go ahead and mix with a hand mixer or you can do this in the stand mixer if you want just until it’s all nice and blended together okay let’s go ahead and set this aside and now let’s blend together our dry ingredients

We have just shy of two cups of flour about 1 and 3/4 cups and couple tablespoons and then what we’re gonna do is we’re going to add one and a half teaspoons of baking powder one and a half teaspoons of salt 3/4 teaspoon of cinnamon and 1/4

Teaspoon of nutmeg go ahead and whisk this together you can also just sift it all together if you like and now what we’re gonna do is we’re going to add the flour mixture a little bit at a time about 1/4 of it at a time and then with a wooden spoon we’re just

Going to stir it in to blend it we don’t want to over mix it okay some more flour go ahead and scrape the sides okay our batter is ready alright since I love a good crumble on top of my muffins I’m going to make a quick crumble I have 1/2 cup of sugar

1/3 cup of flour 1 and 1/2 teaspoons of cinnamon and then we’re going to add 1/4 cup of softened melted butter here go ahead add that in there and then with a fork we’ll just mix this all together to form our crumble ok our crumble is ready and you can skip

The crumble step if you like go ahead and take some batter and fill up the paper cups in your muffin pan about 2/3 of the way ok and then you just come in here with the crumble and you just go ahead and put some of that on there

I’m gonna leave some with crumble and some without okay and then you bake these in the oven at 350 degrees for 23 to 25 minutes until a toothpick goes in and comes out clean all right when our pumpkin muffins come out of the oven they will look like

This go ahead and let them cool for 10 to 15 minutes there we go pumpkin muffins they were really easy to make if I can make them you can make them I’m Matt Taylor this has been another episode of in the kitchen with Matt thank you for joining
