In today’s video I show you how to make Homemade Pumpkin Gnocchi from scratch.
Making your own Pumpkin Gnocchi it’s fun and of course delicious!
This is a vegan (egg-free) and very easy and simple recipe, because you only need three ingredients.
I use Homemade Pumpkin Purée (link to the recipe https://www.youtube.com/watch?v=GoTYL65LuJ4), so these Gnocchi are definitely healthier and taste different from the store-bought ones that you can find at the grocery store.

Recipe

Ingredients:
Homemade Pumpkin Purée 450g
Flour 300g
Salt

Execution Method:
Mix all three ingredients into a dough with your hands. Please make sure to mix the dough quickly and just until combined, otherwise, the flour’s gluten will make the gnocchi tough! Then form the dough into a mostly-smooth round little ball on a lightly floured surface.

Now cut the ball of dough into quarters and roll each one into a long rope. Cut the rope into bite-sized pieces, about 1.5 cm. Make sure they have a little coating of flour to prevent them from sticking to the work surface. Also, make sure to leave some space between the gnocchi bites, otherwise they will tend to stick together.

At this point, the gnocchi are basically ready to use. So if you’re very hungry, you can cook them directly and serve them this way. But if you want to shape them into the typical classic gnocchi pattern, continue with the next step.

Press a Gnocco (this is the singular of “Gnocchi”) against the tines of a fork and slide over them by pressing lightly with your thumb.

By shaping the gnocchi you create these stripes that help the sauce stick better to them. It’s pretty similar to pasta – The more texture the noodles have, the better the sauce sticks to them!

When your gnocchi are shaped you can either cook them to serve immediately or freeze them for up to 2 months for later meals.
