Preparation

  1. Cook the noodles in boiling salted water until tender. Do not overcook. Drain and reserve 1/4 cup cooking liquid.
  2. Meanwhile, in a small skillet, add the olive oil and the green pepper. Salt and pepper to taste. Cook briefly until tender. Set aside.
  3. Return the noodles to the pan; add the reserved liquid, green pepper and the butter. Salt and pepper to taste; add Parmesan. Toss well and serve immediately.
