This beef tenderloin recipe is an elevated classic dish that my family thoroughly enjoys, especially during the Holidays. In our opinion, it is one of the best, most tender meats. I begin with a little rub of olive oil, generous coating of salt/pepper, and finish it off with a delicious Cowboy butter. We cook the tenderloin in the oven, first at a high temperature to give a little sear / browning, then we lower the temp for a perfect, tender finish. I used the app, ‘RoastPerfect’ to calculate cooking times.

Cowboy Butter (measure with your heart)

The first thing I did to get started was I rinsed my beef tenderloin under really cold water and then I made sure it was paded really dry after that I am now using butcher’s twine and I’m tying up the roast and you can get your roasts your Tender

Loin trimmed and tied however these were purchased from Costco and they come really nicely trimmed but they don’t tie them so you just need to do that yourself in this case and that is what I’m doing I’m not very good at it as you can see but eventually I do get the job

Done after I get both of the tender loins tied up I then drizzle them with olive oil we are going to be putting the roast into a 450° oven for the first 15 minutes and this really helps with that Browning process and it also helps the salt and pepper stick to the

Roast so as you can see here I’m just mixing together some Cracked Pepper and salt and then I just make sure that I really coat the roasts well with the salt and pepper mixture making sure I get all the sides and then I try to Pat it in really

Well so that it’s really stuck on there like I said this then goes into a 450° oven for 15 minutes and then after that you turn your temperature down to 325 and depending on the weight of your roast you cook it for additional time I used an app called roast perfect for
