KALAMATA OLIVE BREAD
baker’s nonstick spray
1/2 medium onion, caramelized
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk, cold
2 Tbsp unsalted butter, melted & cooled a little
2 large egg whites
1/3 – 1/2 cup kalamata olives, pitted & roughly chopped
1 Tbsp fresh oregano, chopped

1. Preheat oven to 350°F. Coat an 8 x 4-inch loaf pan with baker’s nonstick spray. Set aside.
2. In a large bowl add flour, baking soda and salt. Whisk to combine. Make a well in the center of the mixture and set aside. In a separate bowl add egg whites, buttermilk and butter. Whisk to combine. Add buttermilk mixture to flour. Stir just until moist. Fold in olives, onions and oregano.
3. Pour batter into loaf pan and evenly spread. Bake for 45 minutes to 1 hour or until a wooden toothpick inserted into the center comes out clean.
4. Sit loaf pan on a wire rack to cool for 15 minutes. Run a knife around the edges then remove loaf to a wire rack to cool completely, about 1 hour. Slice and serve.
