Hello everyone um my name is laurelai Li gaspi we’re here again um Indian Health Council in the kitchen with laurelai uh today I will be showing you how to prepare or cook uh stuff bell peppers um the recipe will be on your screen and if you have some questions nutrition

Education question you can call our um registered dietician Miss and um or you can call me for a cooking demonstration here at the clinic we can do it one onone all right to start off with our recipe I got the ingredients we have bell peppers I got some onions I

Got carrots some crushed tomatoes and um pork you can use um ground chicken um oh this is ground beef I’m so sorry uh you can also use pork ground turkey ground chicken or any other meat that you you like or or you can go vegetarian for a

Stuffed bell peppers and you can use mushrooms and other vegetables like um kale spinach bell peppers asparagus are in seasoned carrots we could go on and on and I think the the option is you know endless and there’s a lot of um possibilities on these um baked stuffed

Bell peppers all right and we have to um use also um mozzarella cheese I got some Italian seasoning I got a little bit of garlic powder um black pepper and a little bit of salt all right and I to start with I will um put this is our

Nonstick pan and I will put a little bit of oil here and while this is warming up you know we have to kind of um cut it in half you can use also you can do on top and remove the the seeds in the bottom

And um kind of remove the seeds and wash it and cut it in half or um you know when you do this process you can put it in an oven 400° Fahrenheit and kind of cook it a little bit for about 20 minutes so I did this earlier and I have some bell

Peppers already in the oven let me go get it okay all right okay our bell peppers are slightly cooked we will set this aside and we will um prepare the the stuffing all right I put a little bit of olive oil and we can put our

Onions kind of cook it a little bit it you don’t have to overcook this one because um everything will when we stuff the peppers we will put it in the oven and it will still cook all right I have about half a cup of shredded cabbage no cabbage carrots

Here a little bit of of carrots when you do your own stuff bell peppers you can put as much or as little you know vegetables that you like this one looks beautiful already and I can put now the ground beef this ground beef is 90% lean and 10% fat so it’s you know

It’s very good it’s lean all right and we will just cook this through okay let’s wait for a few minutes while our beef is cooking okay um our ground beef is browned well cooked already and at this point we can put a little bit of crushed

Tomatoes I’m not going to put the whole thing because it’s it’s a lot I don’t want our um stuffed bell peppers to get mushy and um if you want more it’s okay but let’s try you know half of the bowl with this tomatoes and also at this point we can

Put um our Italian seasoning just about a tablespoon a little bit of garlic powder you can put also fresh garlic garlic if you want a little bit of um black pepper and a little bit of salt not too much just a pinch of salt because the mozzarella cheese is a is salty already

Okay just mix it up I think we can put a little bit more of the tomatoes there we go and just combine everything all right I think we’re ready to stuff our bell peppers but let me taste it a little bit okay if this is let’s taste M it’s good it’s

Good all right let’s turn this off and um these are the kind of precook oh it’s a little bit hot a little bit of um a slightly cook bell peppers you don’t have to do that process if you don’t want to you can just put everything in

The oven as soon as it’s stuff so that’s the process that you can skip if you want okay and um let me put this one one at a time I want to be very generous with my stuffing all right and this you can prepare this ahead of time you know Sunday morning

You can prepare for the week and you can refrigerate this for about 3 to 4 days and you’re all set to take it to work to take it to school and pack our bell peppers it’s beautiful there’s so many um bell peppers orange yellow green red by different colors it’s very

Appetizing you can do this also when you go to a potlock or picnic a very good dish to show off to your friends and family all right that’s very generous imagine one pound of ground beef goes a long way and this could feed about two or three family members

I think I’m going to put everything here all right and look at that it’s beautiful and this is the best part too we’re going to top it with mozzarella cheese [Applause] okay it’s beautiful already I’m getting hungry and again the oven will be 400 um de fah and until the cheese is

Melted all right it’s beautiful all right let me take it to the oven let me show you and and um we will check it until the mozzarella cheese is melted all right all right let’s check our Bell stuffed bell peppers it’s looking good very hot and look at the mozzarella

Cheese oh isn’t this beautiful all right so this is our stuffed bell peppers look at the mozzarella cheese piece it’s a little kind of brown color and that looks good and I hope I make you hungry and you know very very delicious all right um try it at home and call me
