Beetroot Yogurt Dip That I Can’t Stop Eating | Easy & Healthy Beetroot Recipe

Ingredients:
* 1 medium-sized beet, peeled, cooked and grated
* 1 cup (240g) thick and strained yogurt
* 1 clove garlic, minced or finely grated
* 2 tablespoons (30ml) olive oil
* 1 tablespoon (15ml) fresh lemon juice
* Salt to taste
* Optional toppings: Chopped fresh mint or dill for garnish, walnuts/roasted split almonds

Instructions:
1. Prepare the Beet: Wash and peel the beet. Cook the beet by boiling or roasting until it is tender. Allow it to cool. Grate the cooled beet using a fine grater (or if you like it smooth, you can use a blender/food processor).
2. In a bowl, combine the grated beet, thick and strained yogurt (eg. Greek yoghurt), minced (or finely grated) garlic, olive oil, and fresh lemon juice. Mix well until all the ingredients are evenly incorporated.
3. Season the beetroot yogurt mixture with salt to taste. Adjust the seasoning as needed.
4. Refrigerate the beetroot yogurt mezze for at least 30 minutes to allow the flavors to meld and the mezze to chill.
5. If desired, garnish with chopped fresh mint, dill, walnuts or roasted split almonds for added flavor and a pop of color.
6. Serve the beetroot yogurt mezze as a refreshing and vibrant side dish or dip. It pairs well with pita bread, crackers, or vegetable sticks.
