RECIPE:

Baked Salmon Salad
2 pounds of salmon seasoned with olive oil, salt, and black pepper.
3/4 cups chopped celery
3/4 cups shredded carrots
3 tablespoons red chopped onion
2 tablespoons chopped chives
Zest of 1 lemon
For the dressing:
1 tablespoon of mustard
1/4 cup lemon juice
1/4 cup olive oil
1 tablespoon maple syrup
Salt and pepper to taste
How to prepare:
Bake the salmon in the oven at 400°F for 20 minutes. Wait for he salmon to cool down. Into a bowl add the salmon and shred with the help of a fork. Add the celery, carrots, chopped onion, chives, zest of lemon, salt and pepper and mix well. Set aside. Let’s make the dressing. Into a bowl, add the mustard, lemon juice, olive oil, maple syrup, salt and pepper to taste. Mis well and pour into the salmon mixture. Mix well and serve.

Salada de Salmão Assado
1 kg de salmão temperado com azeite, sal e pimenta-do-reino.
3/4 xícara de aipo picado
3/4 xícara de cenoura ralada
3 colheres de sopa de cebola roxa picada
2 colheres de sopa de cebolinha picada
Raspas de 1 limão
Para o molho:
1 colher de sopa de mostarda
1/4 xícara de suco de limão
1/4 xícara de azeite
1 colher de sopa de maple syrup or mel
Sal e pimenta a gosto
Como preparar:
Asse o salmão no forno a 200°C por 20 minutos. Espere o salmão esfriar. Enguanto isso, em uma tigela adicione o salmão e desfie com a ajuda de um garfo. Adicione o aipo, a cenoura, a cebola picada, a cebolinha, as raspas de limão, o sal e a pimenta e misture bem. Reserve. Vamos fazer o molho. Em uma tigela pequena, adicione a mostarda, o suco de limão, o azeite, o maple syrup, o sal e a pimenta a gosto. Misture bem e despeje na mistura de salmão. Misture bem angelica
