#plantbasedcooking #vegan #plantbased

Welcome to the whole food plant-based cooking show where we make plant-based cooking easy I’m Jill and today I’m gonna teach you how to make a delicious broccoli Waldorf salad So spring is finally here and I know for North Carolina it’s absolutely beautiful although we do have the pine pollen so you can’t really have your windows open but I will take this nice spring warm days any day so let’s just get started what I have here I’ve got just a bag of

Broccoli which equals about two heads of broccoli really two to three small heads of broccoli and I just chopped them up a little bit smaller so that they’re nice bite-sized pieces it’s about it’s a little less than a pound I would say and I have 1/4 of a cup of red onions diced

Really small cranberries blueberries apples sunflower seeds and then our magical creamy sauce and if you want a full recipe just click on the link below in the details below and that’ll take you to our website where we have all of our delicious recipes so we’ve got this

Here we’re just going to pour all of our main ingredients in to the salad bowl so this is just one small apple but if you like you know if you like more apples you can use a decent-sized apple like that but I would say that Apple I had

Was pretty small a cup of blueberries so this salad is loaded with antioxidants the blueberries the apples the the onions it’s just amazing and then sunflower seeds everything is so good for you and then these are cranberries and I would love it if I could find unsweetened cranberries but these have

Just a little bit of sugar on them to preserve them and I’m just not going to worry too much about that so now we’re gonna make our dressing and it’s 1 cup of water 2 teaspoons of white wine vinegar and I really love white wine vinegar I think it just has a really

Nice bite to it but it’s not quite as pungent as like a balsamic or something like that but you could probably use rice wine vinegar too that would work just as well and we have the juice of one lemon and I have two dates what the pits removed and

These are medjool dates neglect dates will work just as well they’re just a little bit more dry and not quite as sweet but they will work just fine and 1/2 a cup of cashews now we’re just going to blend this together until it’s really really creamy ok so now we just

Get to I’m gonna lightly mix this up just a little bit before we add the dressing so now we pour on the magic dressing mmm this is so tasty it’s really nice and springy it’s creamy really kind of hits or checks all of the boxes it’s tangy so

We’re gonna stir this up okay and then the last ingredient is poppy seeds I love poppy seeds on top of my salads or you know that’s in that everything spice that you get on bagels oh I just love it lemon poppy seed muffins so I’m going to

Put about a tablespoon on there and then we’ll just mix it in again stir it up a little bit okay all that’s left is a taste mmm hmm this looks so delicious mmm mmm and guess what it tastes delicious too see you next time

  1. Appreciate your video. I’m a 78 year old guy who takes care of a 1 year old grandson while parents are working as well as my 82 year old wife who has beginnings of Alzheimer’s and I’m wanting to eventually become whole plant diet so I’m looking for recipes like yours that are simple and quick because I’m busy.
    Thank you

  2. Just as an FYI: I buy the organic dried cranberries by Vitacost. They are sweetened with organic apple juice rather than sugar. Love the channel and all the recipes!

  3. ❤️ Would allowing the salad to marinade make any difference? This looks a healthy version of what I see in some salad bars.

  4. You bet. Will try but… You are obviously a Furman gal. I'm an Esselstyn guy. (NO OIL) that's alot of fat (oil) from those Cashews. Any way to eliminate that and still achieve good results??

  5. Lovin' the placement of the YouTube Play Button Award! Looks awesome!
Looking forward to trying this salad too! Yum! ♥

  6. I made this using green onions and I found Crasins with half the sugar. My wife and I really like it, and your channel

  7. Thank you for your wonderful recipes.  I mentioned you in my blog and Instagram on my one year anniversary.  Thank You!  Gayle (paint_thread_gayle on Instagram).

  8. Instead of the sweetened cranberries try barberries. They have a far superior phytonutrient content. Order them online or at middle eastern grocery stores. Thanks for your recipes!

  9. Glad to have come across your channel. Thank you for sharing this recipe. Just curious about what kind of blender you have there. I like that it is in a case.

  10. you've got to be kidding me! The original recipe was apples celery and mayonaise. To make it vegan, sub out the mayonaise for a vegan substitute. Simple. This is not Waldorf Salad in either form, function, or flavour. Shameful!

  11. Hi Jill,Do you have to buy organic cashews, you use alot of cashews in your recipes. Love your You Tube videos. I got your cookbook preordered at Amazon for November 24/20. Looking forward to it. Thanks to you and your husband for all you do to give us healthy information and recipes

  12. Hi Jill! How does this hold up? Could I make this and mix the dressing with the rest of the ingredients and it last a few days in the refrigerator?
