I’m stacy gordon welcome to that’s my jam it’s been a while since i made a pineapple upside down cake i decided i’m in the mood for one this recipe was shared with me several years ago by my friend janine and i think you’re gonna love it let’s get started

I’ve preheated my oven to 350 degrees now i’m going to place one stick of butter in a 13×9 glass baking dish this entire dish is going to go into the oven until the butter is melted now i know most people make pineapple upside down cake with pineapple rings there’s absolutely nothing wrong with

That but i like to use crushed pineapple in this recipe while i’m waiting on my butter to melt i’m going to place this colander inside a bowl i’m going to pour in my crushed pineapple and i’m going to start working it so that we get all of the juice out of the pineapple

I think i’ve strained as much juice as i can out of this can of crushed pineapple so i’m gonna sit this on a plate and set it aside also i’m going to save this pineapple juice don’t throw this out i’ve got about 20 maraschino cherries that i’m going to cut in half

My butter’s melted so i’m just going to set this on the stove and let that cool down just a tad next i’m going to use one yellow boxed cake mix i’m going to dump that in my mixing bowl add three eggs one third cup cooking oil now we’re going to use that leftover

Pineapple juice from our can of crushed pineapples we need one cup of pineapple juice i don’t quite have that so i’m going to add enough water to get me to the one cup level that’s going to go into my mixing bowl i’m going to turn this on mix it on a

Medium speed until the cake is well blended my cake batter looks good now i’m gonna sit this off to the side i’ve got one cup of light brown sugar that i’m going to add to this melted butter i need this to be mixed up really well and i need to be evenly distributed

Throughout my pan i’m going to use a rubber spatula to help me achieve that that looks great now we’re going to use our drained crushed pineapple once again i need this to be evenly distributed with the brown sugar and the butter i’m going to use my spatula to help me

Achieve that as well next i’m going to use those maraschino cherries that we cut in half and evenly distribute that on top of everything else next we want to carefully add our cake batter over top of all of this We want to be very careful not to mix these things together we want the cake batter to be a separate layer on top of our cherries our pineapple our brown sugar and our butter let’s get this in the oven just in case you wonder why i’m always

I baked this cake for about 30 or 35 minutes all ovens are different you’re just going to want to put this in your oven and keep an eye on it until it’s golden and the middle of it lightly springs back next you’re going to want to find a flat
