Crispy Baked Calamari with Homemade Breadcrumbs

Ingredients:

2 pounds calamari, approximately 1000 grams, fresh or frozen
5 tablespoons extra virgin olive oil separated
2 teaspoons oregano dried
1 teaspoon paprika
salt and pepper according to taste
2 cups cherry tomatoes 1 pint, halved
1-2 shallots, depending on size, finely chopped
1-2 garlic cloves minced or grated, depending on size
⅓ cup Italian flat-leaf parsley fresh, finely chopped
1½ cup plain bread crumbs 170 grams, coarse, homemade if possible
2 tablespoons butter cut up into 8 pieces
