Hello everyone and welcome back to my kitchen! Today, I wanted to share with you my all-time favorite appetizer recipe for special occasions! We’ll be making some caviar blini with all the fixings! These mini pancakes topped with caviar are perfect for special occasions!
I love them for birthdays; holidays such as Christmas, New Year’s Eve, Thanksgiving; really anytime you need a really impressive appetizer, this is the recipe! These little appetizers are always the biggest hit with everybody! We’ll start by making the mini
Pancakes. These are super quick and easy to to make, and if you have any left over, you could freeze them for later. And then for our toppings, I like to use some crème fraiche, some chopped eggs, shallots, capers, maybe even a little bit of fresh dill. And then you can use

And over to my website. I always have all the the details online. Meanwhile, let’s get started on this incredible recipe! For our mini pancakes, we’ll start with 1 and 1/2 cups of buttermilk; this is going to make them extra soft and fluffy! Pour the buttermilk into a large mixing bowl.
Add in 2 teaspoons of melted butter, and one large egg. Whisk this all together. For the dry ingredients, we’ll need 1 and 1/3 cup of all-purpose flour. Add in 1 teaspoon of baking soda; 1 teaspoon of baking powder; and 1/4 teaspoon of sea salt.
Mix this all together. Add the dry ingredients into the wet ingredients and then mix this all together. Whisk until you have a smooth and clump-free batter; it should be slightly on the thicker side. And that’s it for the pancake batter! Super easy to make and it comes together
In no time. I’m going to be using my stove top griddle for making the pancakes today; you can also use a regular, electric pancake griddle. I love these little pancakes because they also freeze really well! So if you have any left over from the recipe, just place them into
A Ziploc bag and into the freezer for next time you want some caviar blini. First things first, let’s get this griddle preheating. We want like a little bit less than medium heat, like a medium-low heat. Add a little bit of oil to prevent the pancakes from sticking.
Once the griddle is nice and hot, we’ll drop tablespoon of that pancake batter right onto the hot griddle. And then flip these over with a little spatula once the air bubbles start to come up to the surface and the top starts to become a little less glossy.
And once the little pancakes are done, I like to place them onto a wire rack so they cool down completely. And this way, they don’t get soggy. So don’t stack them one on top of the other until they’re cooled down.
With our pancakes ready, we can work on our toppings. I like to have some chopped capers on the side. We’ll just chop about about a tablespoon, a tablespoon and a half. If you don’t like capers, you could also use some chopped dill pickles. Transfer the capers
Into a little serving bowl; I like this cute little spoon. Next, we’ll need two hard-boiled eggs. Split these in half, and we’re going to separate the egg white from the egg yolk. We’ll finally dice the egg whites. [Applause]
Use a fork to crush the egg yolk, and we’re going to place it into a separate little bowl. Last, we’ll need some very finely chopped shallots. Now, we can set up our little caviar bar for serving. We’re going to start with two bowls of crushed ice. I’m using some black caviar today,
And I have some salmon row. And I’ll nicely tuck them into the ice. This is important because you want to keep the caviar nice and chilled! Get some little mother of pearl spoons for serving; never serve your caviar with metal. You want to use a plastic or pearl spoon. Let’s add a little
Bowl of crème fraiche; you could also use sour cream. We have our diced shallots and egg yolk. And we have our capers. And let’s add some of our little mini pancakes to the tray as well, just kind of arrange them around your toppings.
[Music] And I love to throw in a few stems of fresh dill, kind of around the edges to really brighten up the tray, give it some gorgeous color. Isn’t this the most beautiful spread?! This is going to be so great for the holiday season! You could serve the platter just like
This for your next celebration, or you could put together little pancakes for your guest. I like to spread a little bit of that crème fraiche on the top, and then top it off with the caviar. You
Can also add a little bit of dill on top to make it look extra pretty. And then just arrange them on a serving tray, and this will save your guest time and making the actual appetizer themselves. Let’s make one of these with all the toppings! You can grab a combination of all of them, or just add one. And add some caviar on top. Doesn’t that look incredible?! Good Day Chef 🇺🇦🧑🍳. I'm getting Country Club flashbacks. I never had to put so much work into making something I would never eat. First I want to point out your perfect hard boiled eggs, again. No greenish film around the yolk. I used a box grater for the eggs, the smallest side. We used purple onions, very small diced and sour cream. I really liked making the 100's of toast points (no crust). Personally I find caviar to be 🤢. Did you know that it takes over 2000 salmon eggs to make an omelette 🤭.
