This pan-fried squash has amazing flavour. It’s healthy, budget friendly, absolutely delicious and made using simple ingredients.

You get freshness from the mint and the light red wine syrup adds a delicious sweet and sour touch, making this irresistibly delicious.

What’s more it’s super easy to make with a crusty exterior.

This squash makes a good side dish to any main meal or can even be served as a meal on it’s own, perfect with warm fluffy rice.

Cooking squash this way needs at least an hour for the marinade to infuse at room temperature. Or you can also refrigerate overnight allowing the flavours to improve. Just take it out when needed and allow to come to room temperature.
