Hi my name is emma i’m one of the chef tutors here at the school of wok and today i’ve got a twist on your classic fried rice this is a thai style pineapple fried Rice so the star of the show is the pineapple we’re using diced pineapple in the fried rice and we’re also going to use it as a bowl to serve it in so to dissect this pineapple the first thing i’m going to do is slice it in half lengthways and

Then take out some of that delicious pineapple inside so the easiest way to do this is just to get in there with your cleaver or any large knife and slice your pineapple lengthwise switch it around and cut the crown of the pineapple pick up any pineapple leaves that i’ve just

Dropped on the floor so now i am going to take a smaller knife very easily i’m just running my knife along the sides of the pineapple this is a really nice juicy and ripe pineapple so it slices very easily now i’ve kind of cut a square along the sides of the pineapple

I’m going to do crisscross dices again i’m going perpendicular and doing crisscrosses now you’ve got something that looks like this i’m gonna grab a spoon and just scoop it all out and it comes out easily just like this now this is a really nice dish that’s different from your classic egg fried rice

It’s a really good dish to impress your friends with not only but does it taste delicious but it looks beautiful as well especially when you serve it in the pineapple if you don’t want to buy a whole pineapple then you can also just use a tin of pineapples that will work perfectly as

Well now if there’s still a little bit of flesh left in the pineapple that’s fine you can leave it there and those juices will sleep into the rice and they’ll be really delicious i’ve scooped up my pineapple and these pieces are still a little bit too chunky

So i’m just going to give it a finer chop you want the pineapple to be the same size as the rest of your vegetables so i’ve got diced peppers and i want this to be around the same size take your pineapple and just give it a smaller chop

So here i’ve just got some different ingredients going into my pineapple fried rice i’ve got some diced green and red pepper and some onion and this is just what we had knocking around in the back of the fridge you can use whatever you want we’ve also got some minced garlic some toasted

Cashew nuts you can use other nuts as well like almonds or walnuts that would be delicious we’ve got some white pepper and we’ve got some spices here that are going to give our fried rice a really nice zing a nice warmth and golden color as well so i’ve got some curry powder

And turmeric we’ve got some prawns but use chicken or no meat if you would prefer we’ve got the pineapples that we’ve just diced and also the most important thing apart from the pineapple is some leftover rice now fried rice is always better when you use day old rice because it soaks up

More of the flavor and the seasoning that you give it also got some egg some fish sauce and soya sauce classic ingredients in a thai style fried rice while my wok is heating up i’m going to add my oil all around the sides of the wok

Now the first thing i’m going to do is i’m going to cook off my prawns and set it aside to mix in later on now we cook off our prawns first so that when we mix it in later it doesn’t overcook um if you add it in

Now and left in the wok the entire time during the fried rice it would be overcooked by the end so the prawns only take a few minutes in the wok so now that my prawns have turned bright pink i’m going to take them out of the wok

Set them aside and move on with the rest of my fried rice i absolutely love this fried rice dish it’s a nice uh change from my classic egg fried rice which i make all the time so with fried rice i’m going to add some more oil and i’m going to crack

In my egg into the wok and then i’m going to run my ladle through my egg giving it a nice scramble that’s ready i’m going to push that to the back of my wok and i’m going to add a touch more oil and i’m going to add my rice

Now i push the rice against the wok flipping my eggs over it so that they don’t continue to cook pressing it down getting it really nice and hot moving it about pushing it around that is done push that to the back of my wok and i add my vegetables so i’ve got some

Green pepper some red pepper i’ve got my onion and my garlic all going in at once now the vegetables only take a few minutes as well because you want them to stay crunchy so moving it around my wok i’m going to add my spices i’ve got some turmeric and curry powder putting

It all over my rice pinch of white pepper give that a good mix oh i’ve just got a whiff of those delicious spices giving it a really nice vibrant yellow color i add my pineapple just about a spoonful same amount as the peppers give it a good mix i add some fish sauce

I add a little bit of soya sauce i add my prawns back into my fried rice my cashew nuts reserving a small amount just to garnish mix that all together one final wok toss and that is my fried rice done now i’m just going to bring over my pineapple bowl to serve

Up get some of that delicious fried rice in the bottom of the bowl and then top it off with a bit more of the prawns bring it back over i’m going to garnish it with some spring onions of course i’ve got some chilies just going to sprinkle over the top

I’ve also got some cashew nuts and there is my thai style pineapple fried rice now my favorite part of the video is getting to try the food in the end fried rice never gets old but thai style pineapple fried rice is a really nice change get a bit of prawn and cashew nut

A really nice juicy punch from the pineapples nice crunch from the cashew nuts again don’t want to buy a whole pineapple use the tin use whatever is left in your fridge this is a dish to make at home make sure to subscribe to the school of block youtube channel

A little bit controversial but for me, this is only missing the inclusion of peas and I would have many more prawns for that quantity of ingredients, tinned pineapple for me as sadly my mouth and throat doesn’t like fresh. Oh and a bit of diced bacon or tinned tuna…and stuffed olives, I know really slipping from traditional now but they are such tasty additions.
