Broccoli Almond Soup Recipe

Ingredients:

Broccoli: 1, cut into small florets
Olive Oil/Cooking Oil: 2-3 tbsp
Peppercorns: 25-30
Red Onion: 1
Garlic Cloves: 5-6
Coriander Stalks: a bunch
Almonds: 15-20
Salt: to taste

Method:

Preparation:
Roughly chop the broccoli.
Roughly chop the onions, garlic cloves and coriander stalks.
Cooking the Base:
In a saucepan, heat 2-3 tablespoons of olive oil.
Add the chopped onions and garlic, and sauté them until they start to soften.
Add the coriander stalks and mix well.
Adding Almonds and Broccoli:
Add the almonds to the saucepan. These act as natural thickeners, eliminating the need for milk or cream, making the soup vegan-friendly.
Once the almonds start to soften, pour in 1 litre of hot water.
Bring the water to a rolling boil, then add the broccoli florets. This step helps retain the broccoli’s vibrant green color.
Cover and cook for 5-7 minutes until the broccoli is tender.
Preparing the Roasted Pepper:
In a separate pan, roast about 30 peppercorns for 2 minutes.
Transfer them to a mortar and pestle, and grind into a powder once cool.
Blending the Soup:
Strain the broccoli mixture through a sieve, making sure to keep the stalk as well.
Blend the mixture, using the stalk to adjust the soup’s consistency.
Final Cooking Steps:
Return the blended mix to a pan and bring it to a boil. Adjust the consistency as needed with the broccoli stalk.
Season the soup with freshly roasted ground pepper.
Garnish and Serve:
Garnish the soup with a drizzle of olive oil and a sprinkle of ground pepper.
