Vegan Pancakes Recipe – Whole Wheat Blueberry
Yields: 10 Vegan Pancakes

What do you need to make vegan pancakes:
1 1/2 cups whole wheat flour
1 tablespoon raw sugar
2 tablespoons baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
Pinch ginger
1 cup almond milk
1/2 cup water
1 tablespoons applesauce
cooking spray

How to make vegan pancakes:

Preheat heavy skillet over medium high heat.

Whisk together whole wheat flour, raw sugar, baking powder, cinnamon, salt, and ginger in a large mixing bowl.

Add in almond milk, water and applesauce. Mix until it forms a thick, but pourable consistency.

Pour about 1/3 cup vegan pancake batter into the skillet at a time.

Place about 3 – 5 blueberries or vegan chocolate chips over the top if you choose.

Flip the pancakes to cook the opposite side after the top has bubbles and the edges become dry.

Cook for another 1 – 2 minutes and remove the vegan pancakes from the pan.

Top with more fruit, vegan butter, syrup, or whatever you choose.

Enjoy you vegan pancakes.

Whole wheat pastry flour to a large mixing bowl. Then we are going to add in baking powder, raw sugar, cinnamon, a touch of ginger and a little bit of salt.

I have sprayed my frying pan with a little cooking spray to keep it non – stick I am using a cast iron pan. As you can see, I just added a couple of blueberries on top

  1. I love vegan pancakes mainly because I'm a vegetarian. I add soy milk to mine that can be an alternative.

  3. These were AWESOME! However, I think two tablespoons of baking powder seems like too much, so I used one tablespoon instead for my second batch and they came out just the same. I also added a teaspoon of vanilla. These were so fluffy and amazing, great with not only blueberries, but sliced banana too. Can't believe it's vegan! Thank you!!!

  4. I used King Arthur's 100% whole weat flour, 2 Tbsp of baking powder, 4 Tbsp of applesauce. Extra cinnamon and extra ginger. You don't need the sugar. Threw some heated mashed blueberries on top with a little sugar free syrup. No oil necessary on non-stick griddle. Not lying, these are THE BEST pancakes I've had. Light, fluffy, moist, and full of flavor. Will be doing this again, again, and again fo sho!
