Italian sausages with peppers and onions may just be the gateway food to becoming obsessed with your air fryer. Fast, easy, and delicious and you’ll also appreciate how you can cook each component without having to use multiple appliances which makes cleanup super easy. Anyway, this is a no-fuss meal that Steve and I make pretty often and it never fails.

BONUS TIPS:
• In the video, you’ll see that we only assembled two completed sandwiches; those were for our dinner the night I recorded. Then I assembled two more and wrapped each in foil to take for our lunches the next day. They are delicious cold because the pepper/onion juice soaked into the bread, but you can also reheat the wrapped sandwiches in the air fryer for 10 minutes at 400° if you like it warm. For the 5th sausage, I cut into bite-size pieces and put into a small container with the last bit of peppers and onions; Steve made a sandwich for lunch again the next day. So yeah…this recipe is a WINNER!
• If you want to keto-fy this recipe, skip the bun and serve as just sausage with peppers and onions or alongside some other veggies like broccoli, cabbage, or riced cauliflower.

Today’s Ingredients:
hoagie/sandwich rolls, split
butter or spreadable butter
3 medium bell peppers, seeded and sliced (1 each red, yellow, green)
1 large red onion, thick-sliced
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
2 TB extra virgin olive oil
1 lb Italian sausage (or however many you want to make at a time without overcrowding the basket)
Optional: provolone or mozzarella cheese

Instructions: Cook each component (buns, peppers & onions, sausages) in any order you like. Adjust cooking times according to your air fryer and size of sausages.

Toasted Buns: 3-4 minutes at 350°
• Split each bun in half and spread butter all over the inside. I like to keep one edge still attached, but it’s okay if you split them all the way through. Place open side up into the air fryer and cook 3-4 minutes at 350° until toasty golden brown. Work in batches if you are making several sandwiches. Set aside to cool as you continue.

Roasted Peppers and Onions: 10-15 minutes at 350°, tossing every 5 minutes
• In a large bowl, toss bell peppers, onion, salt, black pepper, garlic powder, and olive oil until thoroughly coated. Pour the mixture into a metal pan (baking pan or cake pan) and place into the air fryer. Cook at 350° for 10-15 minutes, tossing every 5 minutes, until the veggies are soft and as charred/blackened as you like. Set aside to cool a little as you continue.

Italian Sausages: 12-14 minutes at 375°, flipping once halfway
• Place the sausages in a single layer directly into the air fryer. Cook at 375° for 12-14 minutes, flipping once during the halfway point. (I used Premios in the video so they were about 3¼ ounce per link).

Assembly:
• Place peppers and onions into a toasted bun and nest a sausage into it. Add any condiments you like, but those veggies with a little juice do just fine on their own. ENJOY!

Optional Cheese on Top? 1 minute at 375° until melted
• Assemble as normal and place a slice of provolone or mozzarella on top. Place into air fryer and cook for 1-2 minutes at 375° until melted. YUM!
