We spent 3 days in the beautiful city of Baguio and one of the highlights was visiting Baguio’s famous Bakeshop and trying their famous strawberry short cake. I was so inspired by the delicious taste of their delicacy that I decided to create my own version of the strawberry shortcake. INGREDIENTS
CAKE :
“Dry Ingredients”
•150g cake flour
•1 1/2 tsp baking powder
•1/2 tsp iodized salt
•99g granulated sugar
“WET Ingredients”
•120g Water
•50g vegetable oil
•4 pcs egg yolks (large)
•1 tsp vanilla
•1-3 tsp Red food color (liquid)
“Meringue”
•4 egg whites (large)
•1/2 tsp cream of tartar
•49g granulated sugar

“Chantilly Cream”
•375g CHILLED whip cream or heavy cream
•3 Tbsp confectioners sugar

“FILLING”
•100G OF chantilly cream
•3 Tbsp strawberry Jam (OPTIONAL)
•2-3 drops red food color (liquid) OPTIONAL
• Strawberries thinly sliced and Soaked in Strawberry wine or lemon juice or kalamansi juice (OPTIONAL), then DRAINED

NOTE: add •1 -2 tsp vanilla into the remaining chantilly cream then whip again or just fold.

“GELATIN GLAZE”
2 tsp unflavored gelatin
30g COLD water
123g water room temperature
1 Tbsp granulated sugar
1 TBSP lemon juice ( OPTIONAL)
